Does converting require an internet connection?
Only to load the page. The conversion itself is JavaScript running on your own device, so once the page is open it works offline and nothing you type is sent anywhere.
Why does my greeting come out as こんにちわ rather than こんにちは?
Both are pronounced the same. こんにちは is written with は because that は is the topic particle, and identifying a particle needs the grammar of the sentence rather than the sounds of the word. These converters stay literal and map the sound wa to わ every time, which is predictable; type ha where you want は.
